Well hello there. My name is Erin, but some people call me Red and then there are others who call me Cookie and a few who call me Barren Erin (it’s a long story). I was born and raised in Wisconsin, where I ate a lot of ice cream, donuts and cheese.
I work in motorsports, which has led me on great adventures all over the country. Since I left Wisconsin I’ve lived in Topeka, Indianapolis and now Atlanta. I live by myself, so my co-workers and race track compatriots are generally the benefactors of my baked goods. I have no impulse control when it comes to good food, so anything I make must immediately leave the apartment! I call it my “bake and release” program.
My days, thoughts, moods and conversations are generally based around food. My love of food requires me to keep active, so to balance my diet I hit the gym everyday and run a good bit. I also tend to eat pretty dang healthy when I’m cooking for myself, so don’t be surprised if you come across a lot of vegetarian items in this blog. I’m fascinated by both vegan and paleo diets – weird I know.
My plan for Adventures of a Hungry Redhead is a heavy dose of crazy good sweets, a dash of healthy cooking, a splash of tips and tricks, a handful of restaurant reviews and a side of workout motivation. You down?
I just found you via the Browneyedbaker. You seem pretty fantastic. Also, vegan and paleo diets AND chocolate? Yes, please.
Thanks for stopping by. I try not to discriminate when it comes to food 🙂
Dear Erin, a.k..a red. a.k.a cookie,
I wouldn’t mind being called cookie too, I love them cookies. I love your energy and the fact that you work in motor-sports, that’s phenomenal. I want to thank you for pinning the poppy seed muffins, It has brought quiet a bit of traffic to my blog, so thank you sooo much!!! I look forward to seeing your posts and following your adventures. Have a wonderful week!
Oh thank you! This made my day! I’m glad people are checking out the poppy seed muffins because they look incredible and I need to make them soon… whenever racing will let me.
Hi Erin
This message is not very secret, but I didn’t know where else to put it, and I did not want it to get lost in the barrage you do doubt receive!
You probably don’t remember me, but we had breakfast together at Marion’s at LRP last summer. I am an old friend of Jon’s and I have try to see him wheel the PC whenever he is in the northeast. I came across your blog yesterday and it seems that you are quite the baker. Are you baking for the Glen this year? If so, are your baked goods for the CORE groupies (a small but vocal group) as well? If yes, what can I look forward to? If no, can I at least console myself with donuts from Tim Horton’s?
Sorry for the ramble, and I look forward to seeing you soon…
Tony
