I am a slacker at this blog business. I remember when I started I had my whole month planned out, my photos edited and my copy ready to go days before things were schedule to post. I agonized over each photo and toggled the contrast, curves and highlights endlessly. I wrote the entry from beginning to end, then went back two or three times to edit.

I am obviously still a food blogger rookie. I went to Taste of Athens on Sunday (Athens is where the University of Georgia is, about an hour outside of Atlanta) and I bombed. Apple Cream Cheese Bundt Cake

Apple Cream Cheese Bundt Cake | Adventures of a Hungry Redhead
I like big bundts and I can not lie! Oh happy day, the day I bought a bundt pan. What is it about a cake in a round circle with deep crevasses and a hole in the middle? It’s still just cake (ok, no cake is just cake, its always OMG CAKE! to me). But, it’s like a giant donut cake with grooves to hold all the icing! Donuts, my Achilles heel. I’m pretty sure you’re not supposed to tell people what your Achilles heel is, but we’ve already established that I’d be a sucky superhero.

I’m also pretty sure that I’ve stated I don’t like cream cheese, and yet, it keeps winding up in my desserts. I guess as long as cream cheese is combine with sugar I’m okay with it. But it can’t be on its own, like a cheesecake. Ew. Yes, I’m from Wisconsin and I don’t like cheesecake. I don’t think they actually make cream cheese in Wisconsin anyway, so my feelings might be socially acceptable in the great white North.  No, if cream cheese is to be in a Hungry Redhead dessert it will be as an icing or mixed in with another flavor, as is the case with this apple and cream cheese swirl bundt cake.

Applesauce Oatmeal Bread

Applesauce Oatmeal Bread | Adventures of a Hungry Redhead
Sometimes people do amazing things: change your flat tire, give you rides to the airport, fly on the trapeze with the greatest of ease. These occasions call for bread. These heroes need your bread. Many times these heroic deeds happen without much warning and your pantry is not prepared with say, bananas or pumpkin or cream cheese. Enter Oatmeal Applesauce Bread to save the day. And no, you don’t need to bake your oatmeal applesauce bread a loaf of bread for saving the day, but you could, in which case you would have a loaf of bread all to yourself after you bestow the first one upon the deserving hero.

This bread rocks because you don’t need softened butter (who ever remembers to take it out of the fridge anyway), you don’t need to use a stand mixer  and you’re more than likely to have oats and applesauce lying around. If you don’t, I suggest you restock your pantry. Continue reading →
