Single Serve Chocolate Cake
It is no secret that I am capable of eating an entire cake by myself. Though no one has witnessed this act, many have seen me slice my own “piece” of cake; it doesn’t take much imagination to guess what happens when I don’t have judging eyes on me. I’ll give you a hint: there is no knife involved.

Cake is my kryptonite. And donuts. And ice cream. Man… I’d make a sucky superhero. Although, I could trap evil villains in a thick flood of buttercream. But I digress.  My complete lack of impulse control around cake means I can’t have one in my apartment. Ever. The single exception is my birthday. If you’re ever in charge of getting me a birthday cake, it should be a Publix marble cake, two layer with vanilla buttercream. The more flowers, the better.

So what’s a girl to do when she’s having a cake emergency and can’t get the image of that glorious Publix cake out of her brain? Lucky me, I found a recipe for a single serving of chocolate cake!  It takes  all of three minutes to mix the ingredients, then 40 seconds in the microwave. Perfect for any cake emergency, since I imagine 911 could care less if you’re craving cake but concerned about your hips.

Speaking of which – forget about your hips! True, Shakira, your hips don’t lie, but this little doozy of a recipe clocks in at only 283 calories by my count. SHUT THE FRONT DOOR you say – I would but the internet does not have doors… only windows.  There’s no egg, only three teaspoons of oil and three teaspoons of sugar. This makes a very dark, chocolaty cake, so you may want to add more sugar based on preference. I forgot the vanilla and it still tasted awesome, but I’m a lover of bittersweet chocolate (emphasis on bitter – the chocolate not me). I will experiment with subbing applesauce for the oil and let you know how it goes. If you want to go to crazy town you could melt chocolate chips and pour over the top of your finished cake or mix some Reese’s Pieces into the batter or grab your favorite piece of chocolate and stick it in the middle to make a mini lava cake. You so crazy! Cake will do that to you…

One Minute Chocolate Cake
Adapted from Chocolate Covered Katie

1 tablespoon plus 2 tsp cocoa powder
3 tablespoons flour
1/8 tsp salt
3 tsp sugar
1/4 tsp baking powder
2-3 tsp coconut oil or vegetable oil
3 tablespoons milk of choice (I used almond milk)
1/2 tsp pure vanilla extract

Pinch of espresso powder (optional)

Combine dry ingredients and mix well.

Add liquids, stir, then transfer to a little dish, ramekin, or even a coffee mug.

Microwave 30-40 seconds, until top is set.

If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it).

PS – did you notice you just ate something vegan? Ha! Gotchya! Well, as long as you used almond milk you did. And if you go to Katie’s website, her version is über healthy, gluten free and about 50 less calories, but I generally don’t have spelt flour and evaporated cane juice laying around. If I did, I’d probably slip in it.
