Bam. That just happened.

Oreo. Peanut butter. Marshmallow. Covered in chocolate.

I barely know what a moon pie is. I think they’re  a southern thing because I first saw them in gas stations on road trips below the Mason-Dixon line. It’s basically marshmallow sandwiched between two cookies and dipped in chocolate. I think this is called a moon pie because it’s so flippin good you fly right past cloud nine to the moon when you eat them.

Oh, and because moon pie sounds better than moon cookie.

If you’re low on time, but have to bring something dreamy to a party, office function or potluck, then bookmark this shit. If you have no baking skills whatsoever but some brave soul put you in charge of dessert, bookmark this shit. If you want to get the kids involved with the holiday cookie extravaganza, bookmark this shit… but don’t tell them I said the ‘s’ word. You know what? Don’t bring it up, because then they’ll ask you what the ‘s’ word is.

There are no specific measurements for this recipe, because  you can scale it to make as many as you need. You could potentially go through a whole package of Oreos, but I think you may run out of the chocolate coating if you only buy a single pack of CandiQuick or what have you. I made 30 of these and had enough chocolate left for maybe three or four more moon pies.

The original recipe also called for smear of Nutella between each cookie, but I didn’t have any on hand and was pretty happy with peanut butter and marshmallow combination as it was.  I also didn’t freeze the cookies after I dipped them in chocolate – they hardened up quite nice at room temperature on the counter.

Fluffernutter Moon Pies

Golden Oreos
Peanut butter (smooth)
Marshmallow fluff
1 pkg milk chocolate almond bark or Candiquik

Line a baking sheet with foil and set aside. Gently twist the Oreos open and line them up on the sheet, side by side.

Smear about 1/4 tsp of peanut butter on one side of the cookie and 1/4 tsp marshmallow fluff on the other side.

Re-sandwich the Oreos and freeze for about 30 minutes or until firm. Meanwhile, prepare the almond bark according to package directions.

Using a fork, gently submerge the sandwiches in the melted chocolate to coat, allowing excess to drip off. Once all pies are coated, freeze again to harden the chocolate, about 20 minutes. Store leftovers airtight, at room temperature 2-3 days or in the freezer, about 1 week.
