After a couple of disappointing baking experiments it dawned on me that I am trying way too hard to find new recipes to post on the blog. Why am I not just going with my tried and true favorites? Part of me could be subconsciously hoarding them for myself, I mean, I am an only child.

When it comes to cooking dinner I definitely stick to a handful of favorites. It’s a feeling like your dog ran away when you spend the entire day and all your grocery budget on a new recipe for dinner only to end up with something inedible.

My favorite dinner dishes use minimal special ingredients, use up what I have sitting in my pantry, require little prep and provide ample leftovers. This Chicken Picadillo that I spotted in Cooking Light years ago checks all those boxes. Continue reading

Wouldn’t it be awesome if these turkey burgers were stuffed with traditional stuffing and I could call them Thanksgiving burgers? Meh, maybe not. It’s probably better that they’re stuffed with goat cheese. Does that mean I should call them goatsgiving burgers? No, that sounds like some kind of ritual animal sacrifice.

But an FYI, since I brought it up: Thanksgiving is 87 days away. In case you were counting the days to turkey, mashed potatoes and pumpkin pie. Yep, I’m jumping on the fall bandwagon. Continue reading

Remember that time when I was Paleo for three weeks? Yeah, that didn’t turn out well; it’s not a lifestyle I can commit to. And you’re all thinking ‘duh, you bake cookies every other day!’ Yeah, well, …. um… shut up! I’m glad I tried it though, because I learned a lot of cool stuff about food and cooking, like, cauliflower can be made into ANYTHING!

I knew it made for good soup already. And remember those Cauliflower Wraps? Well now, I bring you… Cauliflower Rice!

It’s a well known fact that bacon makes everything better. It’s even more well known that cheese makes everything better. Thus, if redhead math serves me correctly, putting bacon and cheese inside chicken makes it the best chicken ever.

Did you hear that? I think I heard your cardiologist whimpering. He’s upset that I took a perfectly good lean protein like chicken and dirtied it up with greasy bacon and fatty cheese. I thought because this recipe had the word “detox” in the title and was chicken it would qualify as Paleo, but then I saw the agave nectar on the ingredient list. Oh well, I’d already committed.

This still has to be healthier than a typical teriyaki recipe and it’s so fricking easy. Well, it’s easy once you locate the mirin and barley miso in the grocery store. I just assumed I had to go to Whole Foods for it and had no trouble locating both in the Asian foods isle.

This recipe came from the website Goop, a side project of Gwyneth Paltrow, which I guess explains the use of “detox” in the title. I swear that woman is always detoxing or on some snobby diet. We’ll ignore this unfortunate side plot and continue with the recipe, which states that it is for one chicken breast, but it is lying. You could easily do four with how much marinade this makes. I know it instructs you to save some to pour over the chicken, but ain’t nobody got time for that. You don’t need it. Ok, fine, it makes a decent dressing if you want to make a salad out of it all, but then you won’t have enough to make four chicken breasts. Continue reading

Ok kids, I confess: I totally fell off the Paleo wagon last week. There were cookies, there was ice cream, there was frozen yogurt, there were chips, there were fries and there were donuts. Gaw! I was doing so well! Maybe too well. Maybe so strict that when I saw a plate full of cookies I couldn’t help but eat five, because who knew when I would see cookies again!?! Actually, I baked several batches of cookies last week and I honestly did a good job of only eating one, to make sure they tasted right, and packing the rest away. Hmmm, so maybe it really means that I totally lose all my discipline when I leave my own kitchen. Damnit. This is going to be hard. Especially with those damn Chick-Fil-A waffle fries calling me like sirens to the drive-thru window… do you hear that? Continue reading

I’ve been embarking on a food adventure of a different kind the last couple weeks. It started when I was eating a slab of frozen cookie dough like a slice of deep dish pizza, which happened to occur the day after I ate half a box of Girl Scout Tagalongs in one sitting, and I thought ‘Is it any wonder I have no energy and live in a constant state of heartburn? I am not 16 anymore. My body can’t take this kind of abuse.’ Especially when I wasn’t even hungry. I know I’m the Hungry Redhead and all, but more and more I find myself mindlessly eating. I kept telling myself to eat healthier, but somehow eating oatmeal for breakfast, a salad for lunch and vegetable stir-fry for diner meant it was okay to eat half a chocolate cake before I went to bed.

So I needed to do something more drastic. I needed something strict, with rules. I needed something that forced me to cut back on my sugar intake… I needed to go Paleo.

Actually, I’d say I’ve gone Pagen, because I still make several violations to the Paleo doctrine (which varies a lot anyway depending on who you talk to). And how am I supposed to keep baking if I’m not allowed flour and sugar? Continue reading

I tend to make these stuffed shells when I want to give some one a break and indulge them with hearty italian food. Food concocted by that vixen of pasta and prosciutto herself: Giada De Laurentiis.
