Remember that free jar of Biscoff spread I got at the Hot Chocolate 15K Expo? Yep, that’s still coming in handy. Since I loved this peanut butter chocolate chip bread I made in the fall, I wondered… could I replace the peanut butter with Biscoff spread and take out the chocolate chips with the same delicious results? Psssst… rhetorical question.

The flavor in this bread sneaks up on you. The first bite says ‘this is ok, but I think I like my other banana bread recipe better,” then a couple bites later, your mouth says ‘I think I can taste the Biscoff now’ and then your nose is thinking ‘oh yeah, that’s the Biscoff!’ and the next thing you know, you’ve finished the slice and sort of want to finish the loaf. I did a bad, bad thing. I didn’t write a single blog post last week. It is an egregious error in the blog word. I’m sorry. Can you ever forgive me? What if I made you Peanut Butter Chocolate Chip Heart Cookies for Valentine’s Day?

I am totally disappointed in myself. I had a week’s worth of Valentine’s Day recipes for you guys and then… I arrived at the race track. Sebring International Raceway to be specific; site of the 12 Hours of Sebring. If you don’t know it, look it up. I’ll be back there again in March for the race, so it appears I should plan ahead blog-wise so I don’t go dark again.

Peanut butter and chocolate; do food combinations get much better than that? It does if you can make it into layered bar cookies in a couple minutes! I said it before with the cake mix cookies and I’ll say it again with these Layered Peanut Butter Bars: sometimes pre-made mix is a good thing. In this case, if you don’t have the time to make peanut butter cookie dough, you just buy the Betty Crocker PB cookie mix.

I am not a fan of New Year’s resolutions. They just seem fake to me – doomed for failure. If it wasn’t important enough to change when you first noticed the problem, why is it important enough to change starting January 1? Exercise for example. Winter has to be one of the worst times to resolve to exercise more (unless you live in California, Florida, Arizona, etc.). I’d give up by March too if my only concept of “working out” was the elliptical. Same for “eat better.” Hello? How many Christmas cookies are still laying around on the counter, leftovers from parties and football food galore since we’re in the middle of bowl season and on the verge of playoffs.

Ok, so I’ve bashed resolutions enough. I don’t want to stop anyone from trying to make meaningful changes in their life. But, if someone with no experience in making resolutions could offer some advice, it would be this: keep it realistic. Try something small and manageable.

I just finished reading an excellent book called The Happiness Project by Gretchen Rubin. In the book, the author examines what defines, contributes and detracts from happiness. She starts a year-long happiness project, focusing on a different aspect of her life she would like to improve each month. A key message I took away from the book is that small changes, continued over a long period of time, make a big impact. Continue reading

Bam. That just happened.

Oreo. Peanut butter. Marshmallow. Covered in chocolate.

I barely know what a moon pie is. I think they’re  a southern thing because I first saw them in gas stations on road trips below the Mason-Dixon line. It’s basically marshmallow sandwiched between two cookies and dipped in chocolate. I think this is called a moon pie because it’s so flippin good you fly right past cloud nine to the moon when you eat them.

I enjoy being one of those people you go to for baking advice. Baking advice is pretty much the only advice I have to offer. Yes, I work in racing, but no, I have no idea why your car is making that noise. Yes, I run, but no, I’ve never used a training program.  Yes, I am a woman, but no, I can’t tell you why your girlfriend is crazy.  Your cookies didn’t turn out? You must tell me everything you did step-by-step and we will get through this together.

With Adventures of a Hungry Redhead in full swing, I’ve received even more inquiries, which makes me blush. Now it’s the holidays and it seems like every conversation struck is an excuse to quiz me about Christmas cookies, which is fine by me, I was going to change the topic and start talking about food anyway. It’s not you, it’s me. I’m hungry.

So let’s talk Christmas cookies. Every Christmas, these peanut butter cup blossoms are my go-to cookie. In fact, at this very moment, there is a supply of them in the mail en route to one lucky office in the continental U.S.

Why is a peanut butter cup cookie my Christmas staple? They’re cute as a button, they’re easy to make, they have a peanut butter cup in them (Hello! Can’t lose!) and the recipe makes a crap ton of cookies. Continue reading

Peanut Butter Jelly Bread | Adventures of a Hungry Redhead

This bread takes you back – it’s old school. My school did not have hot lunch, so I brought a bagged lunch every day. And this foodie admittedly brought the same thing every day: peanut butter & jelly sandwich, fruit snacks, oreos (or other cookie) and Hi-C (later becoming Mountain Dew when I was a cool teenager).  Now that we’re all responsible adults, educated in nutrition, we have  to admit… that was the most awesome lunch ever. You know, as opposed to all the salads or turkey sandwiches we all eat now. Damn I miss the days of being a hyperactive carb burning machine.

Chewy Peanut Butter Cookies | Adventures of a Hungry Redhead

Are people as particular about peanut butter cookies as they are about brownies, or chocolate chip cookies, or sugar cookies?  With the later three, there are clear disagreements on “perfection.” Some like a fudgy brownie versus a cakey brownie. Some argue butter all the way with chocolate chip cookies, while others swear by shortening. For sugar cookies: should they be thick and chewy or thin and crisp? But what about peanut butter cookies? Is there any other way to make peanut butter cookies besides soft and chewy?

That is exactly how these cookies are. They are super soft, tender and delicate… like a baby. You have to be gentle with them… like a baby. They are not crisp on the edges whatsoever… like  baby?  These cookies are delicate and I warn you: they don’t travel well. Do not attempt to mail these cookies or put them in your luggage because they will arrive in pieces… like a baby.
