There are many things monstrous about these cookies:
1. They require a full jar of peanut butter
2. You’ll need a stick of butter in addition to the jar of peanut butter
3. They require four cups of oats
4. You add 1.5 cups of any and all mix-ins you like
5. The dough is monstrously addictive

What happens when you combine blondies and a granola bar? Backpacker bars! You thought I was going to say blondola bars didn’t you?

I believe the fine folks at Betty Crocker dubbed these “backpacker bars” because a) they give you “energy” on a camping journey through the wilderness and b) they make a great backpack snack for the kiddies. We can debate the accuracy of these assumptions, including if peanuts, chocolate, sugar and flour really make for lasting “energy” or a good “snack,” but one thing that is not up for debate on this blog: oatmeal + chocolate + peanuts = delicious. It’s summer. It’s hot. I’m seeing lots of “no bake” recipes pop up on Pinterest and blogs. I agree. Let’s not bake today. Let’s look for an excuse to buy Nutter Butters instead. And an excuse to make whipped cream.

You’d think one wouldn’t need an excuse to buy Nutter Butters and make whipped cream, both are delicious beyond compare. However, this redhead has no impulse control when it comes to Nutter Butters and whipped cream, which explains why I finished off the leftover whipped cream by scrapping it out of the bowl with the leftover Nutter Butters. I believe when I was a teenager I referred to that as a “snack.” I should probably refer to it more as a “relapse” these days. Continue reading

And then there was France

Yeah, so I did that thing again where I bailed on the blog for a month. I think I had a really good excuse though: I was in France.

Technically, I was there to work. I was hosting a web TV broadcast of the 24 Hours of Le Mans. ‘What is the 24 Hours of Le Mans?’ you might ask. Well, it’s sort of the biggest race in the world; 56 cars, 168 drivers, for 24 hours around an 8.5-mile track. And the “track” is made up of public roads. Sweet huh? Check out these crazy machines…

You know the saying “the greatest thing since sliced bread”? I proposed that be changed to “the greatest thing since beer and pretzel cookies.”

Obviously I like everything I blog about. I wouldn’t share a recipe with you if I didn’t think it was awesome – that’s in my Hungry Redhead code of ethics – and believe you me, I’ve made many a cookie and bar since starting this blog that looked oh so wonderful on Pinterest only to become a disaster out of the oven. Even if it looks pretty, but tastes blah, I’m not posting it.

After two weeks of Paleo recipes, I thought I’d freak you all out by posting something vegan. What can I say, I like to keep people on their toes.

I find it crazy that the vegan chocolate chip cookie recipe I posted months ago has so far been the most popular recipe on my blog. I guess vegans are in need of good recipes. These brownies more than qualify. They are decadent in every sense of the word. They don’t require anything super fancy (unless you don’t stock flax seed and what kind of crazy person doesn’t have flax seed in their pantry) and there’s no way you’d know they were *gasp* vegan.
