I’ve been a bad blogger. Bad, bad blogger. Bad! You guys got hosed on March, I mean seriously; stuffed shells and that was it. Not even any Fired Up Fridays. WTF Red?

What’s the excuse? You knew there was going to be an excuse. Well, here’s the thing: I sort of left my perfectly good job to start my own business and I packed up and moved to the other side of town. How scandalous! You’d think some awful man had ruined my life and terrible boss had crushed my dreams, and I was Anne Hathaway, Emma Stone, Rachel McAdams or Reese Witherspoon out to show everyone that I could make it on my own! It was disappointingly far less dramatic. Though there was an awesome soundtrack (Tegan & Sara) and a quirky sidekick (that’d be you Henn).

I think I surprised a lot of people by going off on my own, myself included. The closest thing I have to a business education is the Econ 101 class I was required to take in college. But honestly, it’s been on my mind for quite a while now. I struggle with finding a work/life balance. When I enjoy something, I pour all my energy into it; when I don’t, I put it off until the last minute and then stress about it until my head explodes. For a long time there’s been less enjoyment and more stressing. One of my favorite sayings is “if you don’t like something, change it. If you can’t change it, change your attitude.” Well guess what? I am obviously still a food blogger rookie. I went to Taste of Athens on Sunday (Athens is where the University of Georgia is, about an hour outside of Atlanta) and I bombed. We’ve already discussed my love/hate relationship with cream cheese. We’ve also discussed my feelings on the use of boxed mixes. So, let’s skip the formalities and just declare that Red Velvet Cheesecake Brownies are delicious. And they are red, which makes them perfect for Valentine’s Day. And they’re super quick and easy, which makes them perfect for completion by tomorrow.

Now, Betty Crocker calls these “Red Velvet Espresso and Cream Swirled Brownies,” but I choose to leave “espresso” out of the title, because I couldn’t taste it at all in these brownies. According to redhead math, the subtraction of “espresso” from the title allows me to insert the word “cheesecake.” Continue reading

Valentines Day and Easter are my favorite food holidays. Why? Chocolate.

True, Thanksgiving is all about feasting (or being thankful, whatever), but there’s more savory than sweet there. Yes, Christmas has its endless supply of cookies, but there’s never enough with chocolate. And of course, there’s Halloween, for eating candy while half naked, but everyone takes the chocolate first and soon you’re left with lame Laffy Taffy and Nerds.

But not Valentine’s Day and Easter, oh no. These are the holidays that insist you give me chocolate and you give it to me now, in mass quantities. A stray conversation heart may sneak its way into your stash this week, but those are easily crushed. Continue reading

I did a bad, bad thing. I didn’t write a single blog post last week. It is an egregious error in the blog word. I’m sorry. Can you ever forgive me? What if I made you Peanut Butter Chocolate Chip Heart Cookies for Valentine’s Day?

I am totally disappointed in myself. I had a week’s worth of Valentine’s Day recipes for you guys and then… I arrived at the race track. Sebring International Raceway to be specific; site of the 12 Hours of Sebring. If you don’t know it, look it up. I’ll be back there again in March for the race, so it appears I should plan ahead blog-wise so I don’t go dark again.

Peanut butter and chocolate; do food combinations get much better than that? It does if you can make it into layered bar cookies in a couple minutes! I said it before with the cake mix cookies and I’ll say it again with these Layered Peanut Butter Bars: sometimes pre-made mix is a good thing. In this case, if you don’t have the time to make peanut butter cookie dough, you just buy the Betty Crocker PB cookie mix.

Don’t feel too guilty about this; you’ll be making the peanut butter cream layer and chocolate ganache all by yourself. Continue reading

It’s been raining for three straight days in Atlanta. I’m pretty sure it’s been overcast for a full week. While I don’t miss the frozen, snowy winters of Wisconsin, I have to admit a winter buried in snow is at least bright and pretty; as opposed to a winter running to and from your car under a grey sky. I think I’ve even lost track of day time and night time at this point. Oh yeah, and apparently we’re all going to get the flu and die. Wooo! Happy 2013!

You know what’s going to cheer you up? Strawberry chocolate chip muffins. Oh heck yes. I know it’s winter and strawberries aren’t in season and that makes me the enemy of locavores everywhere, but I needed something to remind me that spring would be here eventually. And duh, it needs to have chocolate in it too.

If your frown still isn’t upside down on this one because you’re sticking with your New Year’s resolutions and you’re like “Damnit Red! I can’t be eating muffins right now!” then let me rock your world : these babies are only 140 calories each. Crikey! You could eat two! Continue reading

There will not be a Fired Up Friday post today. Instead, I’m joining my fellow bloggers in #BloggersForSandyHook. Today, we post in honor of the victims, families and community of Newtown, CT.

I know parents everywhere, upon hearing of the shootings at Sandyhook, immediately thought of their children and wanted them in their arms as soon as possible. I do not have kids. I thought of my mom.

Bam. That just happened.

Oreo. Peanut butter. Marshmallow. Covered in chocolate.

I barely know what a moon pie is. I think they’re  a southern thing because I first saw them in gas stations on road trips below the Mason-Dixon line. It’s basically marshmallow sandwiched between two cookies and dipped in chocolate. I think this is called a moon pie because it’s so flippin good you fly right past cloud nine to the moon when you eat them.
