I’ve been embarking on a food adventure of a different kind the last couple weeks. It started when I was eating a slab of frozen cookie dough like a slice of deep dish pizza, which happened to occur the day after I ate half a box of Girl Scout Tagalongs in one sitting, and I thought ‘Is it any wonder I have no energy and live in a constant state of heartburn? I am not 16 anymore. My body can’t take this kind of abuse.’ Especially when I wasn’t even hungry. I know I’m the Hungry Redhead and all, but more and more I find myself mindlessly eating. I kept telling myself to eat healthier, but somehow eating oatmeal for breakfast, a salad for lunch and vegetable stir-fry for diner meant it was okay to eat half a chocolate cake before I went to bed.

So I needed to do something more drastic. I needed something strict, with rules. I needed something that forced me to cut back on my sugar intake… I needed to go Paleo.

Actually, I’d say I’ve gone Pagen, because I still make several violations to the Paleo doctrine (which varies a lot anyway depending on who you talk to). And how am I supposed to keep baking if I’m not allowed flour and sugar? Continue reading

Tomorrow is T-Minus three weeks to my first half marathon of 2013: the Country Music Half Marathon a.k.a. Rock n’ Roll Nashville. It’s the day after my birthday. Felt like a good way to celebrate. Plus, it means I can eat an entire Publix cake if I want to. That’s redhead math for you: one half marathon = one marble Publix cake.

I’ve been running double digits the last two weekends and this Sunday is scheduled to be 11.5, so you better believe I’ve been loading up my iPod with new music. No, not country music, which I generally don’t like, but I am addicted to Nashville on ABC and own the soundtrack. It would rock my world if the cast of Nashville was at the marathon. They should be handing out the medals. I’d want a sweaty, exhausted, no makeup picture with Gunnar and Scarlett, and Rayna and her girls. But not Teddy Conrad or Peggy Kenter. Boooo!

But anyway, speaking of jilted lovers, right now this song gets me jacked!

M&M Cookies

Proof that I had planned to blog in March: I made M&M cookies with Easter colors. Therein lies the beauty of M&M cookies, they can be customized to any season that suits your fancy.

I’ve been making these cookies for awhile. I found the recipe on -shocker- AllRecipes.com listed as “Award Winning Soft Chocolate Chip Cookies.” I’m pretty sure they’re the highest reviewed chocolate chip cookies on the site, which is saying something considering how many people post reviews.

I could tell just by going through the photos, that these were going to be very cakey cookies, which isn’t how I personally like my chocolate chip cookies, but I did think it would make a great base for M&M cookies. Continue reading

I’ve been a bad blogger. Bad, bad blogger. Bad! You guys got hosed on March, I mean seriously; stuffed shells and that was it. Not even any Fired Up Fridays. WTF Red?

What’s the excuse? You knew there was going to be an excuse. Well, here’s the thing: I sort of left my perfectly good job to start my own business and I packed up and moved to the other side of town. How scandalous! You’d think some awful man had ruined my life and terrible boss had crushed my dreams, and I was Anne Hathaway, Emma Stone, Rachel McAdams or Reese Witherspoon out to show everyone that I could make it on my own! It was disappointingly far less dramatic. Though there was an awesome soundtrack (Tegan & Sara) and a quirky sidekick (that’d be you Henn).

I think I surprised a lot of people by going off on my own, myself included. The closest thing I have to a business education is the Econ 101 class I was required to take in college. But honestly, it’s been on my mind for quite a while now. I struggle with finding a work/life balance. When I enjoy something, I pour all my energy into it; when I don’t, I put it off until the last minute and then stress about it until my head explodes. For a long time there’s been less enjoyment and more stressing. One of my favorite sayings is “if you don’t like something, change it. If you can’t change it, change your attitude.” Well guess what? I tend to make these stuffed shells when I want to give some one a break and indulge them with hearty italian food. Food concocted by that vixen of pasta and prosciutto herself: Giada De Laurentiis. How that woman’s stays so tiny whilst eating so many carbs I’ll never know. I usually make this dish for others, but these last two weeks, I really wish someone could make these for me. Remember that free jar of Biscoff spread I got at the Hot Chocolate 15K Expo? Yep, that’s still coming in handy. Since I loved this peanut butter chocolate chip bread I made in the fall, I wondered… could I replace the peanut butter with Biscoff spread and take out the chocolate chips with the same delicious results? Psssst… rhetorical question.

The flavor in this bread sneaks up on you. The first bite says ‘this is ok, but I think I like my other banana bread recipe better,” then a couple bites later, your mouth says ‘I think I can taste the Biscoff now’ and then your nose is thinking ‘oh yeah, that’s the Biscoff!’ and the next thing you know, you’ve finished the slice and sort of want to finish the loaf. Sometimes I can’t tell if working out is an escape from the responsibilities of the real world, or a responsibility that weighs just as heavy. I’ve been looking for a new apartment for the last two weeks, on the opposite side of town, so every time I went to look at a place (and I looked at more than a dozen) it took at least 40 minutes to get there and 40 minutes to get back. This combined with work, taxes, various appointments, preparations for moving, etc., have made the last two weeks a bit of a whirlwind.

Trying to fit in time to workout has felt like a chore in and of itself. Each time my alarm went off this week, I would immediately start telling myself that I had too much to do today and should skip the gym and just pop open my laptop instead. Most of the time spent at the gym was not relaxing, but frantic, like I had to get this over and done with so I could shower, answer emails and then go look at that next condo.

However, if I feel guilty being at the gym instead of at my computer, then I guess that really does make spin class, the pool, the ellipitical, an escape from the “real” world… even if my legs are REALLY sore the next day.

Whilst on the elliptical this week, I had this gem roll through my shuffle mode and I damn near pulled the handles off he machine I got so into it. It’s not new by any means, but it may be new to you. Beyonce is the shit. Beyonce remixed is cray. Download the Christian Davies remix of Countdown and go HAM on that elliptical.

Apparently the Paleo Pancakes trend has come and gone. Throughout January, my post on Simple Paleo Pancakes (the kind that involves one banana and two eggs) was pulling big traffic into my site. Either everyone has now figured out how to make the two-ingredient paleo pancakes and no longer needed to search, or everyone has given up on eating healthy and is making thick and fluffy buttermilk pancakes these days. Since yesterday was Valentine’s Day, let’s pick a love song for Fired Up Friday. Since P!nk’s new album is “The Truth About Love,” that seems to be a good place to start. Oh yeah, and because I’m going to see her in concert on March 1 (I bet you wish you had friends that gave you such awesome Christmas presents). Since it’s only love we’re talking about I pick “Timebomb.” It immediately stuck out as one of my favorite songs from the album. It’s simple, it’s a silly thing, throw it away like a boomerang. It’s only love, not a timebomb, ok?
