Banana Cream Cheese Bundt Cake

Adventures of a Hungry Redhead | Banana Cream Cheese Bundt Cake
What do you mean Nashville is over? Season finale? Excuse me, what? Nashville is the banana of TV land – it has no season. It needs to be consumed year-round… sometimes with cream cheese in the middle.

I think the reason bananas are not assigned a season is because they take so long to go bad. I guess that might depend on what level of ripeness you like your bananas at, but I’ve gotta be honest, when I buy bananas it’s with the full intention of letting them go brown and baking with them. If a couple get eaten before that, it’s a happy accident. You will always find heavily speckled bananas in my kitchen. Continue reading

Fired Up Friday May 3

Country Music Half Marathon
I finished the Country Music Half Marathon in under two hours! Official time was 1:55.55. In the rain at that! It was a steady rain from Friday night all the way through Sunday. I wore a trash bag until about mile 8. Thankfully the temperatures were decent—60s—and it wasn’t very windy, but I was damn cold walking through the finish line festival.

I’ve been taking it easy this week, but can’t slack for too long; next half marathon is in little over a month, the Allstate 13.1 Chicago on June 8.

My playlist for the Country Music Half Marathon included very little country music, but it did include B.o.B.’s “Still in this Bitch.” I found it particularly appropriate for the middle of a half marathon in the rain. Sometimes you just have to keep your head down and knock it out.

P’Nutty Slutty Brownies

P'Nutty Slutty Brownies | Adventures of a Hungry Redhead
Oh slutty brownies, you triple-threat temptress. Tempting everyone to eat you, but also tempting me to find new combos for you. Maybe it was those damn peanut butter cup s’more bars that got me craving the peanut butter and chocolate combo, maybe I was reminiscing about elementary school lunches, but one thing lead to another and I might have put another Little Debbie classic betwixt cookie and brownie. I have no shame. Continue reading

Fired Up Friday April 26

26 Apr

Nashville Half
It’s here. The start of my race season. Tomorrow is my first half marathon of 2013: The Country Music Half Marathon, a.k.a. Rock n Roll Nashville. On the one hand I’m excited because I know I trained well, this is one of the largest half marathons in the U.S., and I might be a tad obsessed with Nashville lately thanks to the TV show on ABC. On the other hand, this is not going to be pretty; I’m just getting over a cold and can barely breathe through my nose let alone move 10 paces without blowing my nose, and, oh yeah, it’s going to be raining the whole time. Argh! I guess half marathon number five, it was bound to rain on me sooner or later. Any tips for wet weather running?

So that makes this Fired Up Friday extra important because I will need extra motivational music to get me through. Thankfully, I have the new Fall Out Boy album locked and loaded on my iPod. I was knew as soon as I hear it that “My Songs Know What You Did in the Dark” would be my theme song for this first half marathon of 2013. Even when I’m not running and I hear this song, I can feel my feet pounding on the pavement. It lets me block out everything around me. Let’s hope that includes rain and mucus on Saturday.

Goal time : anything < 2 hours

Peanut Butter Cup S’More Bars

Peanut Butter Cup S'More Bars | Adventures of a Hungry Redhead
Tomorrow is my birthday, so I had a grand plan to make today’s post a birthday cake theme. I had pinned and gone through dozens of birthday cake flavored treats and thought I found the perfect one, but alas, be it the recipe or me, it was a birthday cake fail. But you know what? That’s ok, because it means I get to share these Peanut Butter Cup S’more bars with you instead, which I would gladly accept in lieu of cake… but only if cake really wasn’t an option, especially Publix marble cake with buttercream frosting. Or ice cream. Or both. Continue reading

Vegan Chocolate Stout Brownies

Vegan Chocolate Stout Brownies | Adventures of a Hungry Redhead
After two weeks of Paleo recipes, I thought I’d freak you all out by posting something vegan. What can I say, I like to keep people on their toes.

I find it crazy that the vegan chocolate chip cookie recipe I posted months ago has so far been the most popular recipe on my blog. I guess vegans are in need of good recipes. These brownies more than qualify. They are decadent in every sense of the word. They don’t require anything super fancy (unless you don’t stock flax seed and what kind of crazy person doesn’t have flax seed in their pantry) and there’s no way you’d know they were *gasp* vegan. Detox Teriyaki Chicken

Detox Teriyaki Chicken | Adventures of a Hungry Redhead
I thought because this recipe had the word “detox” in the title and was chicken it would qualify as Paleo, but then I saw the agave nectar on the ingredient list. Oh well, I’d already committed.

This still has to be healthier than a typical teriyaki recipe and it’s so fricking easy. Well, it’s easy once you locate the mirin and barley miso in the grocery store. I just assumed I had to go to Whole Foods for it and had no trouble locating both in the Asian foods isle.

This recipe came from the website Goop, a side project of Gwyneth Paltrow, which I guess explains the use of “detox” in the title. I swear that woman is always detoxing or on some snobby diet. We’ll ignore this unfortunate side plot and continue with the recipe, which states that it is for one chicken breast, but it is lying. You could easily do four with how much marinade this makes. I know it instructs you to save some to pour over the chicken, but ain’t nobody got time for that. You don’t need it. Ok, fine, it makes a decent dressing if you want to make a salad out of it all, but then you won’t have enough to make four chicken breasts. Continue reading

Cauliflower Wraps

Cauliflower Wraps | Adventures of a Hungry Redhead
Ok kids, I confess: I totally fell off the Paleo wagon last week. There were cookies, there was ice cream, there was frozen yogurt, there were chips, there were fries and there were donuts. Gaw! I was doing so well! Maybe too well. Maybe so strict that when I saw a plate full of cookies I couldn’t help but eat five, because who knew when I would see cookies again!?! Actually, I baked several batches of cookies last week and I honestly did a good job of only eating one, to make sure they tasted right, and packing the rest away. Hmmm, so maybe it really means that I totally lose all my discipline when I leave my own kitchen. Damnit. This is going to be hard. Especially with those damn Chick-Fil-A waffle fries calling me like sirens to the drive-thru window… do you hear that? Continue reading

Paleo Crockpot Breakfast Pie

Easy Paleo Breakfast Pie | Adventures of a Hungry RedheadEasy Paleo Breakfast Pie | Adventures of a Hungry Redhead
Paleo breakfast food is not pretty. It is genius, it is delicious, it is filling, but it is not going on the cover of Taste of Home anytime soon. Must be something about the grey/brown of sausage mixed with the fluorescent green and orange of the vegetables. Combine that with egg yolks and you have… mud.

This recipe is genius. It is easy, it is tasty, it is filling, but it is not pretty. Even the original version that used sweet potato was putting lipstick on a pig when it came time for photos.

This was the first “Paleo” meal I made. I wanted something for breakfast that tasted good and got me through to lunch, but that I didn’t have to spend much time on in the morning. Enter a lovely lass named Juli, her blog PaleOMG and a crockpot. Continue reading
